As the leaves are changing and the squash are nice and ripe, we’re taking advantage of all that autumn has to offer—starting with these scrumptious squash meals. Who says you need meat to have a hearty meal? These recipes are all vegetarian (and most vegan), but hearty enough to leave you and your family feeling satisfied.
